Food & Nutrition Services implemented several strategies, which have reduced Mayo Clinic Health System in Eau Claire’s environmental impact:
Visitors and staff are encouraged to use standard plates, glasses and utensils, which can be washed and reused.
Styrofoam food containers — that can take up to 400 years to disintegrate in a landfill — have been replaced with a compostable, 100-percent biodegradable material made from corn and sugar cane that breaks down within months. We are now using 75 percent less petroleum based products.
Compost collection containers have been set up for disposal of biodegradable materials that are then sent to a composting site.
A new dishwasher consumes one-third the water and one-quarter of the energy used by the previous model.
Flow-rate aerators reduce water use by two gallons a minute from faucets.
