    Pumpkin Spice Cookies

    Ingredients

    • 1 package (18 1/4 ounce) reduced-fat yellow cake mix
    • 1/2 cup quick cooking oats
    • 2 to 2 1/2 teaspoons pumpkin pie spice
    • 1 egg
    • 1 can pumpkin
    • 2 tablespoons canola oil

    Directions

    In a bowl, combine the cake mix, oats and pumpkin pie spice. In a separate bowl, beat the eggs, pumpkin
    and oil together. Stir into dry ingredients until just moistened. Drop 1 tablespoon batter on baking sheet
    coated with nonstick cooking spray. Flatten with back of spoon. Bake at 350 degrees for 18 to 20 minutes
    or until the edges are golden brown. Place on wire rack to cool. Makes about 5 1/2 dozen cookies.
