Vitamins and minerals in fruits and vegetables are expressed through color, so when you eat a variety of colors, you’ll be eating a variety of vitamins and minerals. Many fruits and vegetables come in different colors, and each has a different taste and nutrient. Don’t overlook the multiple varieties of bell peppers, pears, oranges and leafy greens. It’s easy to mix multiple colors of a fruit or vegetable to add a little more flavor and variety to your meals.
