Chickpea Salad

Ingredients

  • 1 16-ounce can garbanzo beans, drained and rinsed
  • 1/2 cup red onion, diced
  • 1 celery stalk, chopped
  • 1 – 2 tablespoons low-fat mayonnaise
  • 1 tablespoon lemon juice
  • Dill weed to taste

Directions

Mash the beans with a fork. Add onion, celery, lemon juice, mayonnaise and dill weed. Salt and pepper to taste.
