Reducing Waste

Food & Nutrition Services implemented several strategies, which have reduced Mayo Clinic Health System in Eau Claire’s environmental impact:

  • Visitors and staff are encouraged to use standard plates, glasses and utensils, which can be washed and reused.
  • Styrofoam food containers — that can take up to 400 years to disintegrate in a landfill — have been replaced with a compostable, 100-percent biodegradable material made from corn and sugar cane that breaks down within months. We are now using 75 percent less petroleum based products.
  • Compost collection containers have been set up for disposal of biodegradable materials that are then sent to a composting site.
  • A new dishwasher consumes one-third the water and one-quarter of the energy used by the previous model.
  • Flow-rate aerators reduce water use by two gallons a minute from faucets.
