Creamy Fruit Salad

Ingredients

  • 1 20-ounce can pineapple tidbits, drained
  • 1 14.5-ounce can sugar-free sliced peaches, drained
  • 1 11-ounce can sugar-free mandarin oranges, drained
  • 3 medium bananas, sliced
  • 2 medium apples, cored, peeled, sliced, any variety
  • 1 box nonfat sugar-free vanilla pudding
  • 2 cups skim milk
  • 1/2 cup orange juice concentrate
  • 3/4 cup nonfat sour cream

Directions

Place fruit in a large bowl. In a small bowl, combine pudding mix, milk and orange juice concentrate. Beat with electric mixer for two minutes. Beat in sour cream. Fold into fruit mixture Cover and chill for one to two hours.

Makes 12 cups — 1 1/4 cup = 1 fruit serving
