Pumpkin Muffins

Ingredients

  • 2/3 cup powdered milk
  • 6 tablespoons flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon sugar substitute                                                      
  • 2 eggs
  • 1 can pumpkin
  • 1 teaspoon vanilla
  • 1/2 cup grated carrots
  • 1/4 cup raisins                                

Directions

Combine dry ingredients in a bowl. In a separate bowl, beat eggs, add vanilla
and pumpkin and mix well. Fold into dry ingredients. Add carrots and raisins and mix
well. Spoon into muffin pan sprayed with nonstick cooking spray. Bake at 350 degrees for 20 minutes.
