Pilgrim Soup

Ingredients

  • 16 ounces frozen mixed vegetables
  • 16 ounces frozen broccoli
  • 64 ounces fat-free chicken broth
  • 1 cup chopped onion
  • 2 pounds frozen fat-free hash browns
  • 2 cups skim milk
  • 2 cans fat-free cream of chicken soup                                 
  • 1/2 pound lite Velveeta cheese (optional)
  • salt and pepper to taste

Directions

Bring broth to boil. Add vegetables and boil until tender-crisp.
Add remaining ingredients, reduce heat and simmer.
